The Twenty-Something Diet

A few friends and I are currently on a steady diet of rice and beans. It's getting to the point where it's laughable what we're trying to do with it. Ever shred pecorino romano over jasmine rice and black beans? I certainly don't recommend it.

I've been paying special attention to my roommate's edition of The Joy of Cooking, free publications like Edible Brooklyn, and Zora O'Neil's blog Roving Gastronome for ideas. Not to mention the local Coop's foodstuffs.

If anyone knows of some other resources for cheap cooking in hard times, send them along to john at thimblezine dot com. I'll compile and share with the rest of you sad, sad children.

I might be possibly maybe losing my insurance soon. I think I'm going to go on a shopping spree with this knowledge. I'll get new prescriptions (antibiotics are free if I go out to NJ these days!), have lots of blood drawn (some stored for safe keeping), I'll get shot up all over, and maybe I'll have a hip replaced. You know, just in case I need one anyway in the future.

Do I COBRA, or don't I COBRA? Do I risk bankruptcy, or do I go for catastrophe (!) insurance? I sure as hell can't afford the Freelancers' Union's less-than spectacular offerings, so maybe I'll just take that temporary risk of vulnerability and see what lady luck throws at me.
